Funfetti Cupcake Recipe

Who doesn’t love sprinkles?! These cupcakes taste just as good as they look. Funfetti is acceptable for any occasion and your friends will thank you for bringing these goodies.

Cupcake Ingredients:

• 1 ¾ cups cake flour

• 1 ¼ cups all-purpose flour

• 1 ¾ cups granulated sugar

• 2 ½ teaspoons baking powder

• 1 teaspoon kosher salt

• 1 cup unsalted butter (room temp &)

• 4 eggs

• 1 cup whole milk

• 2 teaspoons vanilla exract

• ½ cup rainbow sprinkles- the best part!!


Frosting Ingredients:

• 2 cups unsalted butter (room temp)

• 5 cups powdered sugar

• 2 tablespoons vanilla extract

• More rainbow sprinkles- go crazy and decorate as desired



• Preheat oven to 350 degrees

• Line your cupcake pan with fun cupcake liners

• In a standing mixer add: cake flour, all-purpose flour, baking powder, salt

• Mix on low until incorporated together

• Still on low, add butter and mix until it looks like coarse sand

• Add eggs one at a time

• Pour in milk & vanilla extract (SLOWLY- it will splash)

• Once combined increase speed and beat for 2 minutes

• Turn off mixer and use a spatula to hand fold in sprinkles

• Fill cupcake tins 2/3 full

• Bake for about 20 minutes, or until a toothpick comes out clean

• While your cupcakes are cooling you can make start making the icing

• Put on whisk attachment to mixer

• Put all butter in mixer on high for 5 minutes (scrape sides as needed)

• On low, add powdered sugar

• Once combined add vanilla extract

• Bump up the speed to medium-high and whip until light and fluffy (about 2 minutes)

• Make sure your cupcakes are cooled before frosting

• Top off your masterpiece with more sprinkles
